Not Too Sweet Granola

When my mom was diagnosed with type 2 diabetes, my doctor shared the best wisdom, she guided me to books about glycemic index and nutrition. Store bought cereal may contain high sugarI’ve tried many variations of granola, it’s always in my pantry for my family or as a quick homemade recipe gift.  Have fun substituting different nuts and seeds.

  • 3 Cups Large Flakes Gluten-Free Oats
  • ½ cup Unsweetened Coconut flakes or chips
  • ½ cup raw almonds
  • ½ cup raw cashews
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 2 tbsp ground or whole flaxseed
  • 2 tbsp chia or hemp heart
  • 2 tbsp cinnamon
  • 1 tsp salt
  • ½ cup maple syrup or liquid honey
  • 2 tbsp melted coconut oil
  • 1/3 cup natural peanut butter (optional)
  • 1/2 cup dried cranberries, cacao nibs or chocolate chips
  • Preheat oven to 350 F. Line a shallow baking pan with parchment paper and set aside
  • In a large bowl, combine dry ingredients; oats, coconut, almonds, cashews, pumpkin seeds, sunflower seeds, flaxseeds, chia or hemp hearts, cinnamon and salt
  • In a small bowl combine wet ingredients; maple syrup or honey, melted coconut oil and peanut butter, if using.
  • Combine wet and dry ingredients, mix completely coated.
  • Spread evenly on prepared pan.
  • Bake for 20-25  minutes, stirring every 10 minutes.
  • Once granola looks golden or light brown, remove from oven and let cool.
  • Once cool, stir in dried cranberries / cacao nibs, chocolate chips.

How Long Will Homemade Granola Last?

Homemade granola can last 4 weeks when stored in an airtight container at room temperature in a cool, dry place. For longer storage, freeze the granola in a resealable bag for up to 3 months.

  • Clumpier Granola: Press the mixture firmly onto the baking sheet before baking and avoid stirring too much for larger clusters.
  • Customize Ingredients: Swap nuts, seeds, or dried fruits to suit your preferences.

Keep It Fresh: Always let granola cool completely before storing to avoid moisture buildup.
